If you eat your carrots you will have a rabbit's vision...

Havent we all been told this when we were little by our mum? Well after a bit of research.. she was right. Orange fruit and veggies contain Vitamin A which if you do a quick search the NHS says:

"Vitamin A, also known as retinol, has several important functions.

These include:

  • helping your body's natural defence against illness and infection (the immune system) work properly

  • helping vision in dim light

  • keeping skin and the lining of some parts of the body, such as the nose, healthy"


I have now been vegan for four years and always been careful with my diet, however, this last year in particular has not been easy. I have neglected a bit my nutrition.


Now that a New Year has begun I am resolved to get back on top of it. Looking after me, my body-mind and health.


So why not try some delicious physalis, persimmon, and almonds topped with whipped cream -you can find the vegan version in tesco- and a drop of maple syrup or browne rice syrup or anything else that's rocks your boat!
